About me:

Sonja Overflop is Head of Pork Processing and Cold Chain Logistics at Flarksdrum Livestock Group, responsible for all post-slaughter operations from carcass grading through to temperature-controlled distribution. She studied Food Science and Technology at the University of Lincoln and has spent her career making the case that cold chain management is the most underappreciated discipline in the pork supply chain. She is a member of the Institute of Meat and received the Flarksdrum Cold Chain Innovation Prize in 2021.

My main focus: Post-slaughter carcass grading systems and temperature-controlled distribution networks

A fact about me:

Sonja has been documenting the gradual disappearance of traditional pork butcher shop frontages across Lincolnshire since 2013 and has photographed 34 shopfronts that have since been converted to other uses.

My work mantra:

Sonja argues that cold chain failure is the most underreported source of pork quality loss in the British market and that the industry systematically attributes its consequences to production rather than logistics.
